With the possibility of up to 500 individual added compounds being dropped in on the thousands of compounds already in wine, the influence of smoke on grapes and wine is one more example of the beauty and the curse of wine enjoyment and its production. The interrelationship of these elements in the production process may be one of the more difficult processes, with the resultant chemical reactions, to control.
