With hang time and ripeness being a huge consideration nowadays, an article from July 2004 has been a very good source of information. The article, “Winemakers on Wine: Parameters for Ripeness,” covered all bases, from row and vine spacing, site selection, varietals used, pH concerns, alcohol levels, timely irrigation and even adding back water to recapture flavors. A great article by three very savvy winegrowers, which has me planning on how to manage my vineyards for 2006. ...
