Producing fine wine requires patience, but for one to emulate the traditions of Champagne, it requires even more time and resources than the best still wines. “Can you imagine making wine every year for six years before you even had an idea of what was in the bottle?” asked Andy Lytle, who is the co-founder of Oregon sparkling wine house Lytle-Barnett. Such a long wait on a wine project does require an element of faith, but Lytle also had several reasons to be confident.
