Job Description:

The Enologist will provide production & wine-making support to the Production Department. The Enologist Position is an essential part of the Production Team. They are the expert of the lab, and responsible for all lab analysis, including maintenance and calibration of equipment, and reporting all data into the winemaking database. They provide support for all winemaking operations, and work closely with Cellar Master ensuring all winemaking operations are up to established standards.

Essential Duties and Responsibilities:

Follow all company policies and procedures as outlined in the Folktale Employee Handbook.
Responsible for overall maintenance and cleanliness of the lab.
Responsible for stocking and managing all lab supplies.
Competent in all lab analyses, generating analytical results accurately and efficiently to determine and implement wine actions needed.
Prepare yeast and MLB inoculations, and nutrient, acid, and fining additions.
Monitor fermentations and elevage, reviewing data and trend analysis.
Record lab data, generate reports, and manage lots and vessels with winemaking database software.
Perform calculations for wine amendments and movement.
Prepare samples for third party analyses, and interpret results.
Generate SOP’s as needed for laboratory analyses.
Follow and observe all safe laboratory practices.
Periodical calibrations to ensure accuracy of results.
Execute various bench top trials as needed.
Assist with entering lab data into winemaking database software.
Maintain confidentiality of proprietary information, and protect company assets.
Barrel work- Stirring and topping, filling and emptying, additions, stack and unstack barrels, barrel maintenance and barrel sanitation.
General cellar work- sanitation (tanks, lines and equipment), sampling, wine transfers, additions, rackings, fining, stabilization, bottling, filtration, etc.
Harvest - grape receiving, pressing, pump overs, machine operation, assist with overseeing the interns, etc.
Employ sensory analysis to prevent and remediate spoilage issues, and assist with resolving wines that do not meet specifications.
Support safe work habits and a safe working environment at all times.
Ability to come to work regularly and on time, to follow directions, to take feedback, to get along with co-workers and supervisors, to treat co-workers, supervisors and members/guests with respect.
Following and observing all safe cellar practices.
Cleaning, sanitizing and sterilizing all winery equipment.
Assist with filling special project work orders including waxing, labeling, and case switching.
Support in fulfilling orders for quarterly wine club releases and daily online sales.
Assist in performing on-site warehouse and inventory audits of wine.
Support vineyard management as needed through pruning, leafing, thinning, etc.
Perform vineyard sampling as needed.
Develop outreach opportunities and support interdepartmental enrichments.
Contribute to continuous improvement of winemaking processes and procedures.
May represent the winery at industry, media, or public events.

Requirements:

Bachelors Degree in Enology, Chemistry, Viticulture, Microbiology or related field, or equivalent experience.
2 years of “hands-on” wine production experience including laboratory work desired.

Physical Requirements:

The ability to work in a standing position for long periods of time (up to 8 hours), walk, sit, reach, bend, stoop, climb, frequently lift up to 35 pounds, and occasionally lift/move 50 pounds is required.
This position also requires continual use of manual dexterity and gross motor skills with frequent use of bi-manual dexterity and fine motor skills, and the ability to clearly speak, hear, see, and adjust focus.
